How to Prepare Salad Greens

  1. Fill a large bowl with cold water. Put the greens in the bowl. Using your hands, move the greens gently through the water.
  2. Let the greens sit in the water for a minute to allow the dirt to settle to the bottom of the bowl. (Organic greens tend to have sand and dirt, so wash carefully, repeating this step until free of grit.)
  3. Using your hands or a large spoon, remove the greens from the water into a strainer. (Do not pour the greens through a strainer, or the dirt will pour with the water back onto the greens.)
  4. If you have a salad spinner, spin dry. If not, shake water off the leaves, and wrap in a papertowel or dishtowel.
  5. Store in the fridge for 15 minutes to 30 minutes to allow greens to crisp.
