Instructions
  1. Put the scapes, 1/3 cup of the cheese, almonds and half the olive oil in a food processor (or blender).
  2. Whir to chop and blend ingredients, then add remaining oil and, if desired, remaining cheese. Season with salt.
Recipe Notes

If you’re not using it immediately, press a piece of plastic wrap against the surface to keep it from oxidizing. Store in fridge 1-2 days, or packed airtight can be frozen a couple of months.
