Ingredients
- 10 garlic scapes finely chopped
- 1/2 cup Parmesan finely grated
- 1/3 cup almonds slivered, lightly toasted
- 1/2 cup olive oil
- sea salt to taste

Instructions
- Put the scapes, 1/3 cup of the cheese, almonds and half the olive oil in a food processor (or blender).
- Whir to chop and blend ingredients, then add remaining oil and, if desired, remaining cheese. Season with salt.
Recipe Notes
If you’re not using it immediately, press a piece of plastic wrap against the surface to keep it from oxidizing. Store in fridge 1-2 days, or packed airtight can be frozen a couple of months.
