  1. Preheat oven to 375°F. Place tomatillos in a small roasting pan, toss with 2 Tbs of olive oil and season with salt/pepper to taste. Roast until soft, 20-25 minutes.
  2. Heat remaining olive oil in medium pan, add onions and cook until soft.
  3. Add garlic and habanero and cook for 1 minute. Add chile powder and cook for 1 minute.
  4. Add the roasted tomatillos, stir, cook for 10 minutes. Transfer the mixture to a food processor, add the vinegar, honey, and cilantro, and process until almost smooth.
  5. Season with salt and pepper.
