- 8 tomatillos fresh
- 1/4 cup olive oil
- 1/2 cup red onion diced
- 1/2 cup tomato chopped
- 1/4 cup water
- 1 tsp garlic minced
- 1 tsp cilantro
- 1 Tbs white vinegar
- 2 Tbs hot sauce
Topping:
- salt to taste
- black pepper to taste
- 2 Tbs sour cream

- Slice tomatillos in half, place cut-side down on baking sheet, coat lightly with oil. Roast in 400°F oven until softened (20-25 min.)
- Place tomatillos in a blender with remaining ingredients and puree. Season with salt and pepper.
- Top with sour cream and chopped tomatoes and serve.
