Recipes: Main Dishes
Many of us grew up thinking that the main dish was synonymous with meat; this just simply is not the case. Vegetables can easily be the focus of a meal, with meat and fish as the accent. Or do without meat and fish altogether and assemble a main course of vegetables, whole grains, cheese, and tofu. Simple pastas, tossed with sautéed vegetables and a sprinkle of good parmesan, are as good as meat and potatoes any day.
