A sauce or jam is often that little burst of flavor or extra punch that makes a dish taste so good. Fruit jams and compotes make pancakes, plain yogurt or vanilla ice-cream sparkle while fresh salsas, pestos and vinaigrettes add vibrancy to grilled meats and fish. And there’s nothing quite as nice in the middle of winter as enjoying a batch of fresh, homemade tomato sauce that you have been saving in the freezer.
